The article discloses the economic substance of the concept of "environment" and the basic approaches to the definition of this concept by various scholars. The author disclosed theoretical and methodological bases of research food market. The properties of the environment and its characteristics in the market of agro-food products. The author conducted an appraisal of the available theoretical and methodological approaches to the conjunctural analysis of the market, which is being investigated. The necessity of creating a system of rapid acquisition, processing, storage and dissemination of information about the state of the market at a particular time. Analyzed the nature and methodology of price monitoring in the Ukrainian market of agro-food products. Particular attention is paid to the assessment methods of studying the state food market.
