The article describes the main trends of the system procurement of raw milk in farms and households. The dynamics of the volume of milk in the areas of implementation, an assessment of the dynamics of milk supplied to processing plants. The dynamics of flow of milk processing plants by category sellers. The specific activities of procurement centers for the reception of milk and found them inadequate logistics, which greatly affects the deterioration of milk quality parameters, which enters the Ukrainian milk processing enterprises. Noted specifics of purchase milk from agricultural producers and the ways of improvement of the process towards improving the quality of raw milk.
